Abstract

Due the current concern of the consumer market wiht the welfare of animals for consumption  and how does it affects the final product quality, the objective of this review was turned to the study of management practices less offensive in the pre slaughter of cattle, and installations which provide a comfortable environmental slaughter ambient to them. Stressed and mistreated animals generate carcass with lower quality and with less shelf life. This reflects the lack of knowledge and consideration about the biology of the cattle, related to the management to be adopted during the slaughter, as well as the installations recommended for this process. Thus, the improvement regarding to the physical aspects in refrigerator buildings and the pre slaughter management, has a major influence in the production chain of meat and animal welfare.
