Abstract

Milk is an animal product consumed enough throughout Brazil, which has a great nutritional importance, but it requires monitoring and quality standards, this may represent a risk to public health if its low quality and can run many diseases to the consumer. This article aims to review the literature addressing the general aspects of milk, such as synthesis, fraction and composition, as well as aspects of microbiological and physical chemistry, including the requirements established by Instruction No. 51.
