Evaluation of quality parameters of microbiological drink milk marketed in the city of Mossoró-RN

Abstract

The milk drink is a milk derivative of high consumption obtained from the addition of serum milk itself, which has a widespread use in Brazil. Like most products of animal origin, has a great susceptibility to microbial growth, it is important to assess the degree of contamination. This study aimed to evaluate the microbiological quality of milk drinks marketed in the city of Rio Grande do Norte-RN, by collecting 20 samples from shops around the city. Microbiological tests were performed, which consisted of counts of aerobic microorganisms and determination of most probable number of coliform. The evaluation of the results showed that 30 and 20% of the samples, respectively, showed off the standards established by Normative Nº 16 of 23 of August of 2005, in relation to the count of mesophilic and most probable number of coliform. Thus, there is a need for increased hygiene measures throughout the production chain of the product in order to decrease the degree of contamination.
