Abstract

Honey is a food product, produced by bees has many characteristics, including physical-chemical, sensory and therapy. This article aims to gather information in the literature on the properties and characteristics of honey, including the standards required by Instruction No. 11 dated 11 October 2000 and those results has been found in recent studies by several authors.
