Abstract

The enumeration of mesophilic bacteria is widely used to evaluate the quality of food, cleaning processes and efficiency of heat treatments. The objective of this study was evaluating the equivalence of alternative methods Petrifilm® and Compact Dry® with the reference method traditional plate count. Were analyzed 18 samples of chicken breast by the three methods and the results were evaluated by Pearson correlation. The alternative methods were done according to manufacturer's specifications. The correlation coefficient determined between the traditional method of analysis and Petrifim® was 0.9178, between the traditional and Compact Dry® was 0.9316 and between the Compact Dry® and Petrifilm® was 0.9235. The results of this study indicate that alternative methods Compact Dry® and Petrifilm® are equivalent to the traditional method of analysis for mesophilic bacteria.
