Abstract

Of minimally processed vegetables, carrots are one of the most popular because of its versatility of use and various forms of presentation to the consumer. The objective was to evaluate the microbiological quality of minimally processed carrots sold in Uberlândia, MG, through the determination of fecal coliform and check if they meet the standards set by legislation. It was collected 10 samples and measures its temperature with a laser thermometer. The study of coliforms were made using the method Compact Dry (Nissan®). The results showed that 50% of samples (5 / 10) were analyzed out of the standards required by Brazilian law. Considering the contamination levels found, it is essential to the implementation of Good Manufacturing Practices by establishments producing minimally processed carrots. It also needs more effective and rigorous oversight by the competent bodies in order to ensure a safe and healthy product to the consumer.
