Abstract

The objective of research were evaluated levels of sodium chloride, nitrate and nitrite in samples of Minas cheese commercialized in fairs of Goiânia – GO. The research was carried in Laboratório de Análises Físico-Químicas of Centro de Pesquisa em Alimentos of Escola de Veterinária of Universidade Federal de Goiás, during april the august of 2006. Were harvested and analyzed 24 samples of Minas Frescal and Padrão cheeses, for the determination of the NaCl, nitrate and nitrite. The sodium chloride of the cheeses Minas Padrão varied of 0,96% - 7,04%, with an average result of 3,86%. For the cheeses Minas Frescal the variation was of 0,58% - 2,96%, with an average text of 1,04% of chloride sodium. Was not observed the nitrate presence and nitrite in the evaluated samples.
