Abstract

Beef is an excellent source of protein for humans, not only for its nutritional qualities, but also by the efficiency of animal feed to produce a noble from fodder and mineral supplement. But the quality of meat depends on several factors, among these is the subject of this review: the importance of fats that make up the carcasses of beef cattle, because although the search for lean meats, some features rely on fat for optimum organoleptic. The technique of ultrasound can be a tool used in selecting the best animals and the proper amount and distribution of fat.
