Profile analysis of the animal origin product consumer

Abstract

This literature reviews was performed to investigate the profile of the products of animal origin (PAO) consumer and the factors that influence the purchase of these products. The results indicated that the main retail location where the consumers buy the PAO is the supermarket. Among the interviewed, most of them said not have any restriction about the consumption of the different PAO. However, there was a higher percentage of beef consumers compared to the other PAO types. Among the factors that influence the PAO purchase, the predominant were the quality and price. Related to the disposition to pay more for a differentiated product, more than half said that have the disposition to pay more for a product from production systems that consider the animal welfare (AW). A big proportion of the consumers consider that PAO from systems that respect the AW are healthier. Among the consumers, most of them are women, had high school level, and familiar income up to three minimum salaries.
