Abstract

The need to monitoring large volumes of grain, milk and dairy products as regards the presence of aflatoxins B1, B2, G1, G2 and M1 and limits established by law, seeks the use of rapid analytical methods, efficient and cheap. The enzyme linked immuno-sorbent assay (ELISA) has been recommended as a tool of great importance for aflatoxins analysis in foods, because its aggregates the features necessary for such purpose. The direct competitive ELISA, no doubt, is the most used in the analysis of aflatoxins in grains and dairy products. The recommendation of ELISA use for rapid screening method for aflatoxins is unanimous in the world.
