Abstract

Molecular techniques are nowadays a valuable tool for food pathogens identification, no matter its origin. In this review, the major molecular techniques are listed for food microbiology tests. The use of most efficient techniques as molecular ones, allows errors in the identification and consequently in the treatment of humans and livestock animals less frequent, improving health fast treatments for food infections.
