Abstract

The Brazilian poultry industry has distinguished itself worldwide because of its productivity and quality. However, the high cost of food has directed efforts in the search for foods that make the most efficient and economical diets. This review covers general aspects of the phytase enzyme, with emphasis on production and its application in diets for broilers. In this respect, it was observed that phytase can be produced under submerged and solid-state fermentation or in plants. The use of phytase also improves bird performance and digestibility of nutrients, contributing to the reduction of environmental pollution, since it reduces the amount of nutrients in excreta. Therefore, the use of phytase is important for the sustainable development of poultry production.
