Abstract

Salmonella is one of the most important food pathogens when foodborne diseases are studied. Whereas the products of poultry products are the main reservoirs of this agent, it is necessary for more effective controls are in place to prevent its presence throughout the production chain, starting at headquarters. However, the introduction of control procedures is complex, since normally it is a microorganism apathogenic for the animals. Without appropriate diagnosis and complete understanding of the epidemiology of the disease, infection with Salmonella of the lots may not be perceived. The use of molecular techniques such as ribotyping allows rapid identification of the problem and its seriousness in poultry production.
