Microbiological quality in chicken carcasses of abattoir in the city of Uberlândia

Abstract

The microbial contamination in food is responsible for the occurrence of many outbreaks of toxinfections in humans. This study aims to assess the importance of microbiological quality of chickens carcasses, through the research of micro indicators, such as Salmonella and coliforms. The collections were made in 3 slaughterhouses with Municipal Inspection Service in the region of Uberlândia, totaling the number of 20 samples, 10 of them collected after evisceration, and the other 10 collected before the packaging. We did not detect the presence of Salmonella and were found in 40% of the samples, fecal and total coliforms. Although there is no legislation in Brazil for detection of microorganisms from swabs of chickens carcasses, the results show the need of these tracking.
