Abstract

The present work had the objective of evaluating the presence of Salmonella spp., total and thermotolerants coliforms in pig carcasses with help of a slaughtered in Uberlândia, MG. Three distinct stages had been analyzed in abate (points A, B, C) and a total of 18 carcasses were avaliated. The samples had been directed to the Laboratory of Quality Control and Alimentary Security of the College of Medicine Veterinary of the Federal University of Uberlandia (FAMEV/UFU). The coliforms were analyzed through the technique of most likely Number (NMP) and Salmonella spp. was determined like absence/presence. It wasn’t identified Salmonella spp. in the evaluated samples and it occurred bigger contamination of coliforms in point C, therefore of 6 analyzed carcasses, 4 were contaminated. While in point B only 1 carcass was contaminated and in the point A didn’t have contamination.
