Abstract

The study were considered with the objective to evaluate the enzyme presence  in samples of Minas cheeses (frescal and padrão), commercialized in fair of Goiânia – GO. The research were developed in the Laboratório de Análises Físico-Químicas of the Centro de Pesquisa em Alimentos of the Escola de Veterinária of the Universidade Federal de Goiás. The enzymatic tests developed in the samples of Minas cheeses commercialized in the fairs of Goiânia, GO, indicated absence of pasteurization of the raw material.
