Food security is a concern, both for food for human consumption and animal consumption and the handling is a key factor for quality. Hay is a food commonly used for animal feed. The use of organic fertilizers from animal feces has been questioned due to the sanitary quality of it. The objective of this work through to the evaluation of microbiological samples of hay stored and protected with canvas and unprotected in the shed of metabolism. Analyses were performed for total coliforms and fecal coliforms (MPN / g) and the count of fungi and yeasts. The hay samples were taken from a shed metabolism of the Department of Animal Science (DZO) of the Center for Agricultural Sciences (CCA) of the Federal University of Piauí (UFPI) and analysis were performed at the Laboratory for Microbiological Control of the Center for Studies, Research and Food Processing (NUEPPA) of (CCA) of (UFPI). The samples were collected randomly from each bale and collected around 200 grams of sample for analysis with ten repetitions of each hay, with and without protection in 90 days. There was no significant difference (P>0.05) in coliform counts at 35 °C in the hay with and without protection, which shows that the presence of coliforms at 35 º C is due to contamination of hay in the period of hay where it is produced in diversity of the field exposed to the environment. There was no significant difference (P> 0.05) in the growth of fungi and yeasts in relation to storage and unprotected by canvas, while the hay covered with tarpaulin has submitted a score less than the unprotected hay. Hay analysis showed satisfactory processing conditions and proper storage, which favored the final product quality according to the analysis performed.
