Abstract

The stage was held at the Federal University of Viçosa in Viçosa - MG, with monitoring in the area of ​​Inspection of Animal Products and intended to supplement the knowledge gained in college and the academic approach of working life, with routine practice, allowing compare different forms of expertise and viewpoints, which added to the theoretical concepts preformed shape a personal form of professional practice. In this paper we described the monitoring of two projects Masters: the first entitled "Evaluation of techniques Polymerization Chain Reaction (PCR) and nested PCR for the identification of Salmonella spp. in bovine carcasses ", which aimed to evaluate alternative methods for detection of Salmonella spp, since conventional methods are time consuming and laborious, and the second, entitled" Characterization of microbial goat milk in Viçosa, MG, and identification of proteolytic activity of Pseudomonas spp. isolates that product "that aimed to assess the microbiological quality of raw goat milk, through research of hygiene indicator microorganisms (aerobic mesophilic, total coliforms, Escherichia coli, Enterobacteriaceae spp., total psychrotrophic, proteolytic psychrotrophic) and the research pathogens (Salmonella spp and Listeria sp) and Pseudomonas spp.
