Sexual odor in meat of swine and acceptance by the consumer

Abstract

Untrained persons participated in a sensorial taste panel to evaluate their ability to detect sexual odor and acceptance of meat from intact male pigs. Pork loin samples from intact male, castrated male, criptorquida and female were used. The panelists attributed scores from 1 to 10 for tenderness, flavor, juiciness an overall meat quality. Following were asked to point out which sample tasted odd flavor and which one was from intact male. Mann-Whitney, Kruskall-Wallis and Binomial tests were used to compare and analyze the results. Women showed a higher perception in regard to the sensorial quality of the meat, but in an overall way panelists were unable to identify which samples were from intact male as well as among the treatments.
