Physical-chemical and microbiological aspects of the organic or usual milk

Abstract

The main purpose of this research is the comparison of the milk produced in organic management towards the one that comes from usual production. Thirty samples, from 10 pure breed animals (Gyr), and Girolando (on blood levels: 1/4, 1/2 e 5/8), during different lactation periods (between the 2º and 5º), were collected at: Felicidade Farm, designated to the organical milk production, and Peroba Farm, designated to usual milk production, both in Ituiutaba – Minas Gerais, during the months of February, March and April. These samples were submitted to mesophiles counting; fat content, dry extract and protein determination, and to somatic cells count. To the statistical analysis the test t Student (p < 0,05) was used, comparing the averages acquired on each of the analyses. It was concluded that the organical milk showed higher level of fat content, dry extract and protein, and there was no difference on mesophiles counting, neither on somatic cells counting toward the usual milk.
