Abstract

Evaporated milk added with sugar emerged as an alternative for the conservation of raw milk and became a very popular product for its various forms of use in cooking, and can be served as an accompaniment to fruits and ice cream, cocktails, pies and in the preparation of desserts in general. Brazil is the country that consumes the most condensed milk in the world, reaching around 200 thousand tons a year, the high consumption is a reflection of the high manufacturing technology of national industries, offering products with high added value and allowing the consumer several options of brands, prices and quality. The present study aimed to evaluate possible adulteration by addition of starch in different brands of condensed milk. The results obtained in this study demonstrate compliance with the legislation.
