Bovine meat consumer profile in Uruçuí-PI

Abstract

The present study aimed to analyze the profile and preferences of the beef consumer in the city of Uruçuí - PI. The methodology used was survey type, cross-sectional, through the application of a structured questionnaire in order to obtain information on the profile and habits of beef consumption in that municipality. The research was conducted from November to December 2016 in Uruçuí-PI, with residents randomly selected in the neighborhoods Aeroporto, Água Branca, Centro and Malvinas, totaling 60 respondents, 15 people interviewed for each neighborhood. The questionnaire consisted of 13 questions addressing the consumption preference of different varieties of meat and beef cuts, the quantity, frequency of consumption, as well as characteristics of the purchase place and quality of beef offered. The families of Uruçui have preference for beef, purchased from butchers, with the rib being the most consumed cut. Research has shown that the consumption of beef by most households is two to three times a week, with two to five kilograms purchased weekly. The respondents consider important the appearance of the product and that the appearance and hygiene of the place influence the customer at the time of purchase. Although many of the respondents regularly consume beef, they consider it an expensive meat, but a nutritious food.
