Abstract

The swine meat beyond being the consumed animal protein source more in the world greatly contributes with the world economy with its volume of production and exportation. It bears mentioning also, its social importance through the generation of jobs indirect right-handers and its contribution in the growth of the local economy. However, one expects that this growth is gradual, as consequence of works and programs of spreading of the nutrition quality of the meat swine and its benefits to the health. New cuts come being launched in the market, the nutrition quality and palatability go if adjusting to the demanding consuming market and increasing the perspectives in the consumption of the meat swine. In such a way, the aim of this revision is describe historically and to analyze the positive and negative points of the production and commercialization of the meat swine telling to the trends and perspectives of market, national and international, detaching the conditioning of the consumption in Brazil, and determining possible solutions to revert the current situation of its low consumption.
