Abstract

The bacterium Salmonella spp. is one of the main etiological agents of DTA (foodborne diseases) in Brazil and in the world, in which eggs and egg-based products are involved in several outbreaks. Egg contamination can occur at several stages along the production chain, from obtaining chicks to processing. Therefore, measures to minimize the contamination of these products of animal origin, with the prevention and control of the presence of Salmonella in eggs, is very important for onehealth.
