Abstract

This study aimed to evaluate the microbiological quality of artisan Minas cheese, through analysis of coagulase positive Staphylococcus. Were analyzed 20 samples, sold in street markets of the city of Uberlandia, Minas Gerais. The results showed that 18 (90%) had counts above the established standard for coagulase positiveStaphylococcus. From these results we can conclude that the microbiological quality was unsatisfactory, representing a risk to consumer health.
